CHRONO CHIANTI DOCG RISERVA

VINIFICATION:
Classic in red, soft pressing, five days of fermentation. Maceration with skins at 28 - 20 ° C for 10 days, with regular racking and return to extract more flavors (délestage). Aged until March in temperature-controlled tanks, then aged in barrels for at least 12 months; part of the wine is then stored in new Allier and Cher barriques for a further 3 months.
